Jesse's Seriously Lemon Tart

Ingredients
1 ready crust
1 1/2 c sugar
1 c lemon sections (no skins or seeds)
2 t lemon rind (Kaye used less)
2 T lemon juice
2 T corn starch
2 whole eggs + 3 egg whites
1/2 t salt
12 slices (very thin) whole lemon
2 T brown sugar
Coat straight-sided pan with cooking oil spray and press dough.
Line with foil and pie weights and bake at 450 for 10 min.
Remove pie weights, cook 5 min more.
Reduce oven temp to 350.
Mix sugar, lemons, juice, corns starch, salt, and rinds.
Bring to a boil whisking constantly. Boil for 30 seconds.
Gradually add hot lemon to egg, whisking constantly.
Pour into pie crust and top with lemon slices.
Bake at 350 for 15 min.
Sprinkle with brown sugar.
Bake for 10 min more, then broil for 90 sec.
Cool 1 hour then chill 3 hours.
Try with clementines.
