Ingredients:
2 lbs Michigan Potatoes
3/4 c hot beef stock
1/2 c finely chopped onion
1/4 c vinegar (apple cider)
1/4 c corn oil
1 t salt
1/4 t black pepper
Cook potatoes, peel while hot, cool somewhat, slice 1/8" thick.
Add all other ingredients & mix gently
Garnish with green onions.
Serve at room temp.
