Ingredients
2/3 c chopped onion
4 cloves garlic, minced
1 T ground cumin
1/2 to 1 t crushed red pepper
2 T oil
3x 16 oz cans black beans with liquid
1 1/2 c chicken broth
3 c salsa (hot or not)
2 T lime juice
1/2 c sour cream or plain yogurt
Cook onion, garlic, cumin, pepper in oil - 3 min.
In blender, puree 2 cans beans with chicken broth.
Add to pot with whole beans, salsa, and lime juice.
Simmer 30 min.
Serve with dollop of sour cream & crackers.
