Ingredients
3 lb boneless skinless chicken breasts
2 eggs, beaten
2 T parmesan cheese
1 t parsley
1 clove garlic, minced
1/2 c flour
salt & pepper to taste
1/4 c bread crumbs
butter
1 T chopped chives
1/4 c lemon juice
Mix cheese, parsley, garlic, and eggs.
Coat chicken with flour & dip in egg mix .
Fry on both sides in butter.
Arrange in baking dish.
Sprinkle with bread crumbs and chives.
Dot each piece with butter.
Season with salt and pepper.
Bake at 350 for 10 min.
Sprinkle with lemon juice and bake 10 min more.
